Pairings: Rich, fatty meats work well to soften tannins, try roasts, smoked meats, stroganoff, shepherd’s pie. For veggie options, try hearty roasted potatoes, cauliflower, turnips, or celeriac. Unusual vegetables like garlic scapes, bamboo shoots, and sun chokes work very well.
Avoid pairing with oily fish such as herring, salmon, tuna, trout, and swordfish. The oils can react strangely with the tannins and create a metallic flavor.
Cheese Pairings: Mozzarella, Fontina, Gruyere, Swiss, Stilton/Blue (as a flavoring), Brie, Farmer’s Cheese, Yoghurt, Cream Cheese, Coconut Milk, and Cream
